Margarita Cocktail Club plate

No. 01 · IBA

Margarita

The one everyone thinks they know, ruined by a decade of sour mix.

  • 50 mlTequila, 100% agave
  • 20 mlTriple sec
  • 15 mlLime juice, freshly squeezed

MethodShake with ice and strain into a chilled cocktail glass. Half a salt rim, if you want one — half, so you can choose per sip.

No. 02 · House pour

Gin & Tonic

Not a cocktail so much as a standard of living.

  • 50 mlGin
  • 150 mlTonic, cold, opened just now
  • —Ice, more than feels reasonable

MethodFill a copa glass with ice, pour the gin, then the tonic down a bar spoon so it keeps its bubbles. Lime wheel and a rosemary sprig, as on the tee. Never stir it hard.

No. 03 · IBA

Dry Martini

Six to one. Anything wetter is a negotiation.

  • 60 mlGin
  • 10 mlDry vermouth

MethodStir with ice in a mixing glass — never shake, it bruises nothing but it does cloud the drink. Strain into a chilled martini glass. Squeeze the oil from a lemon peel over the surface, or an olive if you must.

Espresso Martini Club plate

No. 04 · IBA

Espresso Martini

Invented for someone who wanted waking up and going out in the same glass.

  • 50 mlVodka
  • 30 mlCoffee liqueur
  • 10 mlSugar syrup
  • 1 shotEspresso, pulled fresh and hot

MethodShake hard with ice — harder than you think, the foam comes from the espresso and it only appears if you commit. Strain into a chilled glass. Three coffee beans on the crema.

No. 05 · IBA

Spritz

Three, two, one — the only cocktail with its own countdown.

  • 90 mlProsecco
  • 60 mlBitter orange aperitivo
  • splashSoda water

MethodBuild straight into a wine glass packed with ice — prosecco first, then the aperitivo, then the soda. Stir gently, once. A slice of orange, never a wedge.

No. 06 · IBA

Porn Star Martini

London, 2002. Still the only drink that arrives with a chaser built in.

  • 50 mlVanilla vodka
  • 20 mlPassion fruit liqueur
  • 50 mlPassion fruit purée
  • 2 bar sp.Vanilla sugar
  • 50 mlChampagne, served alongside

MethodShake well with ice and double-strain into a large chilled cocktail glass. Garnish with a passion fruit cup and sugar. The champagne comes on the side — the point is to alternate, not to pour it in.

No. 07 · IBA

Negroni

Equal parts: the only maths everyone at the bar agrees on.

  • 30 mlGin
  • 30 mlRed bitter aperitivo
  • 30 mlSweet red vermouth

MethodPour straight into a chilled rocks glass filled with ice and stir gently. Half a slice of orange, or a curl of peel as on the tee.

Wear it

On the measures. Where the International Bartenders Association publishes a specification, we follow it to the millilitre — that covers six of the seven above. The gin & tonic is a highball, not an IBA cocktail: that one is the house pour, and you are welcome to argue with it. We name styles, not brands: use the bottle you like.
